Hmm, I honestly don't want to use Ubuntu, but I picked Xubuntu because of the Xfce desktop manager and it's 64 bit compatibility. Those are my requirements for the linux I am looking for. I don't want to have to install xfce. Xubuntu is the only thing that I can find that meets my requirements.

No, you won't be able to change it, you have to reboot the Live CD until it loads at the correct res. It's a PITA at times, I know. Sometimes, the Live CD just reads the monitor info incorrectly and loads at a lower res.
