Default dual 8600 gts or 8800 gt

I'm having trouble figuring out which graphics cards to pick from. I'm going to be buying a custom made computer from cyberpower pc and so far the configurations look like this

CPU: Intel Dual ® Core™ 2 Duo E6750 CPU @ 2.66GHz 1333FSB 4MB L2 Cache 64-bit
Power Supply: 800 Watts Power Supplies
Mother Board: MSI P6N SLI-FI nForce 650i SLI Chipset LGA775 FSB1333 DDR2 Mainboard
Ram: 2GB (2x1GB) PC6400 DDR2/800 Dual Channel Memory

My question is it better to have dual NVIDIA GeForce 8600 GTS 256MB 16X PCI Express (XFX XXX Edition Powered by NVIDIA) or a single NVIDIA GeForce 8800 GTS 512MB 16X PCI Express? Or perhaps dual NVIDIA GeForce 8600 GT 512MB 16X PCI Express? And depending on which graphic card set i get do i need to pick a different mother board? The one i have supports sli and has two pci express x16 slots. Should i go with asus motherboard?

Thanks a lot!

Either an 8800GT or the 512MB 8800GTS would be better then dual 8600GTS'.
