How much of a benefit can be seen from OC'ing a video card?

Depends how high you overclock it.

Every bit of 2FPS? Surely more - 540 to 700 is a 130% increase.
I really don't know anything about it though. Can somebody explain what the core, the memory clock and the shader clock do? And which are best to OC? And how can I find out to what point it is safe to OC and volt mod? I wouldn't mind getting a little more out of my card - but it doesn't OC for shit. GT's go WAY higher. Except for the mem clock - but the other 2 are dwarfed by GT OCs that I have seen.
