I recently saw a computer with two video cards in it and they said it really increaces your graphics. Although, they had two of the same cards. I'm wondering if i could use a EVGA e-GeForce 7900 GS KO pci-e with a XFX GeForce 6800 XTreme pci-e???

No, you can't. With SLI, you have to use indentical GPUs.
