In the past few days I've been busy getting all the parts for my custom made rig and I'm wondering what OS I should install, XP or Vista? I'm kind of more inclined to Vista because the interface is much neater, but I'm always hearing bad things about it.

Indeed, search for other threads on XP vs. Vista. People are getting tired of bashing each other over a couple of crappy MS operating system, Vista wins anyway. Because Microsoft says so. And some people might even consider this thread a spam...

There's already about 100 threads on Vista. Having it set as the default OS with XP on another drive I hardly even boot into XP anymore since despite grumblings from some who never worked with the newer version long enough to learn how to run it.
It does have a lot of good points while some changes are still a little irritating. The rest of it is purely "user preferences" and not seeing where some needed improvements were made especially now that the first service pack was just released with some fixes seen like recognising the full amount of system memory when 4gb installed due to the 3gb barrier in the 32bit kernel. Pros> A better crash control when games lock seeing the option to bring up the task manager. In XP you often see hard boots by pressing the reset button. Better partitioning tools with the options to resize and even format existing partitions with the drive tools on the installation disk as well as being able to resize secondary partitions with the Disk Management tool. Automatic startup repair tool for restoring boot information and files. Cons: No more add/remove Windows components as seen in all versions going back to 98. Gadgets chew up resources and amount to nothing more then "eye candy" as the expression goes. Others will point at other things as well.

I’m stuck in between the 2 right now. I do most of my video editing on vista but once I’m done I switch back to XP for everything else.
I only have vista on my desktop because of the 64 bit.

will not let me edit...
There are too many different versions of vista. Make sure you sit down and read about the differences in all of them before you decide witch on if you go that rout.
