Default 7200 vs es

What are the differences in the Seagate 7200.10, 7200.11, and es drives. I'm having a hard time deciding what hdd I wan't to buy. There are so many options and the are all so similar. I'm probably going to buy either 1 or 2 250gb or 320. Haven't decided if I want to set up RAID yet.
