I've been looking at the Gateway P-6832, and everything looks great. The only problem is that the graphics card is the Intel GMA X3100, and I don't like that. I prefer the 256MB NVIDIA® GeForce® 8600M GT, and I want to know if switching them is possible.

Intel only makes onboard video. You'd need to find a laptop with DEDICATED graphics that will allow you to swap the video cards out. That way you can upgrade as needed.
