I was wondering what people thought was there own personal view on the operating systems

I currently run a iBook with Mac OS X 10.4
I will be buying a new computer soon most likely it will be...
A IBM/Dell with a external hardrive for a unix system (probably Linux)
and most likeley use Windows every now and then for things I can't do In linux
Or a PowerBook With Mac OS X 10.x (whatever version there up to)
Major Needs:
Good User interface
Not buggy
Fast and stable even if there are millions of programs running
good ease of use in general
Wide range of software with good offerings in engineerring/math/science specialty software.(but not just numbers more like quality)
Security
good to learn on(technical but still user friendly)
So any suggestions
