Default Multi-gpu mode, Windows 7, GTX 295, and dual monitors

"Multi-GPU Mode"

What does this mean?

When it's enabled, both GPUs are on? Because if that's the case, I can't run dual monitors. I can't only run dual monitors when the multi-gpu mode is disabled.

Anyone have an ideas?
