Default removing 1 OS

I have Windows Vista and Windows 7 installed in my computer on two different hard disks. When I boot the computer it asks which one I want to load. Now I want to uninstall windows 7.

1. Can you tell me how to do that so that it is completely removed and it does not ask on start up?

2. And if I want to leave them both installed but I want it to go straight to Vista when it boots without asking how can I do that?

3. If I leave Windows 7 and I want to use programs such as office and games that I already have installed in Vista. Do I have to install them again?
