Default CPU Process Usage

I've got a problem...I'm doing a lot of video streaming lately and I realize I need a LOT of process speed to not lag while uploading...it's incredibly taxing on the computer it seems.

I was checking my CPU with CTRL-Alt-Del "Task Manager" and I was taking a look at what my CPU was pushing out...

Well...when I stream videos at a high resolution and kbps it shoots through the roof...if I have it at a low res...it isn't super taxed. This is one of the first few times I've ever understood what all those fluctuating numbers in the Task manager meant...I don't want the number to be high is all I know I guess...I'm not tech savvy here.

I was looking at some of the other processes that were going on like...I had two notepad files open and they were both taking 3.5k to run each...I quickly closed them shortly after. Is there any way for a non-tech savvy guy like me to know what those other processes are that are running that I can close without having my computer self-destruct or go into a total meltdown because I closed something vital?

Original question: How can I figure out what I should close that isn't vital to the system? This "Desk Windows Manager" thing is like 35k, I'd like to reap that 35k yet I have no idea what that actually is x_X


One final question:
As I was entering this particular forum for the first time...I saw the term "Over clocking" and googled it....I was wondering if this would help in any way? Never heard of it before and really don't know what it is other than the quick definition I got from google really quick.

My Laptop specs are:

Hard Drive: 500 Gigs
Ram: 4 Gigs
CPU: Core 2 Duo T9300 2.50 ghz
Graphics Card: ATI Mobility Radeon HD 3650
Vista 32 home

In system configuration ..> startup how many things you have checked ON..??
