Default Can I extract files off my old hard drive?

I am going to upgrade my comp to a 80gb WD800JB hard drive from a 20gb. I also purchased a 6gb external hard drive to back everything up. But the more I read I wonder if I can just remove the old hard drive, install the new one and format it. Then re-install the old hard drive as a slave and then extract the files I want off it. Does this sound right? Or would it be quicker and easier to just go ahead and back the files up on the external hard drive since I already bought it?
