In those situations where you only have two slots, I like to go with a 2X512 combination. That way if one of the sticks goes bad, I still have a backup until I can secure a replacement. Additionally, if the motherboard supports it, they will run in dual channel and that gives you more bandwidth or more speed plus the benefit of smoother operation.

As far as memory goes and since this is for basic daily operations, I would use corsair select. I have it in all of my Dell desktops and it works great. The price is nice too. Newegg.com carries it and here's a link.
