For me the 7950 gx2 just pips it. Has more pipelines 48 as opposed to 16(48 pixel shader processors), and it has a 512-bit interface as opposed to 256-bit

Well remember that the 7950 GX2 is just two cards in one, it's not a single card.

First off, a single 7900GTX (as the 7950GX2 is based off the 7900GTX) has 24 pipes, not 16. Also, a single 7900GTX does not have 48 pixel shader processors, it only has 24.

Well said, simply having 2*256bit cards does not equal the same output as a 512bit card, especially when it comes to real world performance.
