when you uninstall iTunes, it leaves the iTunes music folder right where it is, no need to back it up.
as for your little dilemma, you could burn an mp3 cd, and then just drag and drop them into a folder.
of course, that'd take a super long time... so my suggestion would be to find a converter.
i found a nice little instruction manual right here, written by a source ive never heard of, but it was the first hit on google for "m4p"
basically, try it. if you dont like it google m4p and see what it comes up with.
