Yup. You can do that. I have my E6300 running @ 3.2 Ghz at the minute with the stock cooler.
However, Cromewell is definately right about Northbridge cooling. I have placed an 80mm fan on top of my graphics card with little blue tac feet, so it's blowing cool air right over it.
If you want help for which to overclock, just ask. You are going to want to raise the MCH voltage by +.1v to get overclocks it excess of ~2.8 Ghz.

P.S. Make sure you update to the latest BIOS too - F7 is the current one. F8 will be released in the next week or two I think.
