I would recommend high-end DDR2-800 memory.

Would DDR2-1000 be overkill? I know the e6400 has a 1066MHz FSB...is the '1000' (or '800' in DDR2-800) the clock speed?

You can get DDR2-1066, which will be better for overclocking, but DDR2-800 will be just fine.

Whats your budget?

Here's a relatively cheap high-performance RAM set, using micron D9: http://www.newegg.com/Product/Produc...82E16820231065

Ya unless you plan to overclock getting anything over ddr2-800 is a waste, because it will still be running at ddr2-800 speeds even if it is ddr2-1066. But when you get into overclocking its great because you can still be underclocking your ram even with an increased FSB, so it essentially takes the RAM overclocking out of the cpu overclocking. Its one less thing to work about, and you are gaurenteed for your RAM to run at higher speeds.

think about it... 2 7900GTs:

that is obviously a much higher number than 7950...
