I have a E6600 with a 945P-S3 motherboard. But I just found out that on the intel site it says that an E6600 needs a 965P chipset to function. Am I losing performance?

Nah man - it works, and everything is fine.
Im just wondering if the performance would be better if I use a 965P chipset...

You aren't loosing any performance. All you really lose is potentially using DDR2-800. Where ever you read you need a 965P was wrong. All you need is chipset that supports dual core (ie a 945) and has VRM11 support (voltage regulation for the CPU)

I got Gigabyte ga945GCMX2 -S2 motherboard with E6750 proceesor. It's fine so far, i just also don't know if i was able to maiximize its performance because if I set to load optimized defaults, CPU speed will automatically set to 2.13GHz instead of 2.66(E6570).
