Default Huge problem with mac policy, any suggestions?

I got all excited about getting a macbook, got ready to order, and started to configure it. Of course, i would like the extra GB of ram in it. I read the fine print, that it is a customized product. I read the return and refund policy..which states:
"If you are not satisfied with your Apple purchase of a product, please call 1-800-676-2775 for a Return Material Authorization (RMA) request within 14 calendar days of the receipt of the product. Configure-to-order, personalized or other customized product may not be returned for refund or exchange under any circumstances unless DOA. "

What is this bs? what if i dont like it? Im about to spend 1600 dollars, and at least they could do is backup their products...have a little faith in what they are selling. What gets at me more is cocky commercials putting down pcs. If it's so better than a pc then why not back their own product?

I've never used a mac before, and personally im skeptical about purchasing one now. Ive heard of plenty of failures, but of course they are covered if you pay an extra 250 dollars for their extended protection plan which is filled with nonsense except the extended warranty.

Im really flamed about this policy, any suggestions as to what i should do or trust? I'm thinking if i go to the actual retail store, buy one, and bring it back within the same day or so they might give me a refund. I'm going to check before I buy of course, but im afriad ill go ape-shit on an employee there if I get a smart ass response.

Also, is it possible to put additional RAM in it myself? Then i could buy the plain jane, and if i dont like it, I can return it.
