Default 8800 comparisons.

How much of a difference is there in gaming perfromance between the 8800GTS 320mb, 8800GTS 640mb and the 8800GTX? Any charts that compare the three?

In basic terms, the 640mb GTS performs a lot better than a 320mb GTS at higher resolutions. But hardly noticable at say 1280 x 1024.
Whereas the GTX out performs them all by quite a way, at any resolution.

So if i wanted to run at 1680 x 1050 resolution i should probably atleast get the 640mb version of the 8800GTS?

If you want to play maxed out at those resolutions, I would recommend it. You could probably get away with the 320MB at 1680x1050, but you may start to notice some lag.

Ok let me know after you get it tested out how it performs if it maxes out settings without lag or not? Plus i'll be running at 1680 x 1050 resolution so that will probably make a difference.

Ya I have a 20'' widescreen so I will be running 1680x1050 on all my games if I can.
