What about these mobos instead: Gigabyte GA-EP35C-DS3R / GA-EP35-DS3P. Is it worth it to get the DDR3 capability of the former? what what are the trade offs? Will they work with the 8800GT?

And what about an ATI Radeon HD 3870 card? Are any of the brands better than the others?

DDR3 at the moment is not worth. Both board are fine for 8800GT
althernative to the above board is the slight cheaper GA-EP35-DS3R.

8800GT is better than HD3870. But HD3870 is cheaper, and if you choose the DS3P MB, you could run crossfire (although not in full speed)

P.S. I personally would get ATI/AMD card if they have similar performance/price... Don't want them to get brust.
