The new UI

Word 2007, like Access 2007, Excel 2007, Outlook 2007 and PowerPoint 2007 and , has a new UI (User Interface). A new, results-oriented interface presents tools when you need them, in a clear and organized fashion. Live visual previews, predefined style galleries, table formats, and other content help you get more out of Word 2007 capabilities.

Stephanie Krieger has a good article on the new UI.
Status Bar

There is a live word count that keeps track of the number of words in a document as they are typed.
Building Blocks
Word 2007 introduces Building Blocks for adding frequently used content to your documents with just a few clicks. Select from a predefined gallery of cover pages, pull quotes, side bars, headers, footers and other types of content to make your documents look more professional. You can even create your own Building Blocks to simplify the addition of custom text, like legal disclaimer text or other frequently used materials. It also helps ensure consistency across all of the documents created within an organization.
SmartArt Diagrams
SmartArt Diagrams are designed to create simple diagrams. SmartArt Diagrams and Charting tools are shared between Excel 2007, PowerPoint 2007 and Word 2007.
Charting
Communicate more effectively with high-impact graphics. New charting and diagramming features that include 3-D shapes, transparency, drop shadows, and other effects help you create professional-looking graphics that result in more effective documents. The new charting engine is shared with Excel 2007 and PowerPoint 2007. This will ensure a common look across documents, spreadsheets and presentations.
Equation Builder
The Equation Builder is built in and helps construct mathematical equations using real mathematical symbols, prebuilt equations and automatic formatting.
Quick Styles
With the Quick Styles you can modify fonts, colours, margins, table formatting and other elements with a single click. New Quick Styles can be added to the gallery.
Themes

Using Document Themes you can change the appearance of text, tables, and graphics throughout the entire document to match a preferred style or color scheme.

Beth Melton, one of the Office MVPs, on Themes.
Citations and References
The Word Reference Builder helps manage and format references in a document automatically. It helps reformat bibliographies and citations according to one of many commonly used style guides, including Associated Press (AP), Modern Language Association (MLA), Chicago Manual of Style, International Formats and American Medical Asociation (AMA). (The current choices are: APA, Chicago, GB7714, GOST - Name Sort, GOST - Title Sort, ISO 690 - First Element and Date, ISO 690 - Numerical Reference, MLA, SIST02 and Turabian)
Spell Checking
Spell checking is now contextual.
Document Comparison
Quickly compare two versions of a document. Word 2007 makes it easy to find out what changes were made to a document.A new tri-pane review panel helps you see both versions of a document with the deleted, inserted moved text and tracked changes within tables clearly marked. Master your review process using Word 2007 and Microsoft Office SharePoint Server 2007. With built-in workflow services in Office SharePoint Server 2007, you can initiate, manage, and track document review and approval processes from within Word 2007, so you can accelerate review cycles across your organization without forcing people to learn new tools.
Document Inspector
Detect and remove unwanted comments, hidden text, or personally identifiable information using the Document Inspector to help ensure that sensitive information doesn't escape when it is published. The new Document Inspector feature can remove comments, tracked changes, metadata, or other information from your documents.
Digital Signature
Help protect your documents with a Digital Signature. With Word 2007, you can digitally sign your documents so the people who read them know it hasn’t changed since it left your hands.
Smart Documents
Create dynamic Smart Documents that update themselves by connecting to your back-end systems using new document controls and data bindings. By utilizing the new XML integration capability, organizations can deploy intelligent templates to assist people in creating highly structured documents. Enhance protection of the private information in your documents.
Blogs
Publish and maintain Blogs directly from Word 2007. You can now publish weblogs (blogs) directly from Word 2007. You can configure Word 2007 to link directly to your blog site, and use the rich Word experience to create blogs with images, tables, and advanced text formatting features.
Document Information Panel
Keep track of documents with the Document Information Panel. Use the new Document Information Panel to add workflow and tracking information directly to your documents. Add Microsoft Windows SharePoint Services information or custom properties to your document templates to extend document management functionality into the Word 2007 environment. Quickly detect documents with embedded macros. Word 2007 uses a separate file format (.docm) for macro-enabled documents, so you can quickly tell whether a file is capable of executing any embedded macros.
Mail Merge
The changes need to be researched.

File Formats

With Word 2007, you can share documents in XML Paper Specification (XPS) format without using third-party tools. Word 2007 is an important evolution of XML support in the 2007 Microsoft Office system, facilitating smaller, more robust documents and deep integration with information systems and external data sources. Spend more time writing and less time formatting. Master Reduce file sizes and improve corruption recovery. The new Microsoft Office Open XML Formats are compressed, segmented file formats that offer a dramatic reduction in file size and helps ensure damaged or corrupt files can be easily recovered.

Beth Melton has an article on the new file format, "Microsoft Office Open XML Formats for the Non-developer".
Acrobat files:
Word 2007 documents will also be able to export to Portable Document Format file (PDF Aka Adobe Acrobat)). A special PDF writer will no longer be required.
