Well the motherboard supports 2 gen 4 nvme drives and 1 gen3 nvme so I would think about getting gen 4 so its a faster access time.

As far as being compatible you select those parts on pcpartpicker.com and it will show any issues.

Seems alright, but I'd definitely double up on NVME capacity and ditch the mechanical drive, especially as they're so inexpensive now in the market. Also like @johnb35 indicated a pcie4 drive can potentially offer you double the throughput since the interface is twice as fast. Depends on the drive what performance target you hit though. 2TB gen4 drives have been floating around the $100 mark such as this guy:

It's just that much better of an experience without mechanical.
