Your question is vague. Just plug in a second monitor and start doing what you want.

Just note that usually when you game and want to do something on the second monitor you usually need to ALT+TAB out of the game, which will pause it.

For example when I play a game such as Doom or Tomb Raider, I would like to use both screens for playing. Do I need to configure something or does it load automatically?

I do not recommend playing FPS games on 2 monitors. Your crosshair will be divided in 2 and it´ll be very unconfortable.

Don't you have to enable Nvidia surround on the Nvidia control panel? I may be wrong because I've never done this.

EDIT: Scratch that, surround is with 3 monitors.

It has. This is a terrible idea. If you stretch a movie or game across 2 screens you're going to have a terrible experience. The movie has a fixed aspect ratio so you're screwed out of the gate on that one and for gaming your character or crosshair will be divided in two making playing properly pretty much impossible. You play surround on 3 monitors, not 2.

Even that is going out of fashion with the rise of ultrawide displays which provide a much more consistent experience.

2 screens are for watching a movie on screen 1 while you game on screen 2, and stuff like that. You don't want to stretch an image across less than 3 screens.
