Monitor Power Output

Is it possible to monitor the output of our PSU when running our computer? ... in order to determine what PSU i really need.

The Kill-A-Watt will tell you how much power your system is pulling from the wall. Multiply that by the efficiency of the PSU (80% is fairly reasonable for a decent PSU) and you'll get the DC output. Just make sure that you build a sufficient overhead into your power requirements, as each rail must provide sufficient power, and it's never advisable to run a PSU at anything close to its maximum output for any length of time.
