Performance difference in 2 different builds

For running demanding applications, namely video editing software like premiere pro, am i likely to see much of a difference in these 2 set ups?

Set up 1
Intel core 2 quad q6700 (2.66ghz @ 3ghz)
8gb 1066mhz ddr2
7200rpm HD
nvidia GTX 460

Set up 2
Intel core i7 950 (3.06Ghz)
8gb 1333mhz ddr3
7200rpm HD
nvidia GTX 460

The main question is does hyper threading make much of a difference in applications that use it? Also, is DDR3's performance much different to DDR2?
