Need some help with MKV files.

I have the complete series of Paranoia Agent all in AKV format. Which I love, cause I like have the options to turn subtitles on or off, or switch from English or japanese languages. Which is great while watching it on a comp, but its making trouble for converting it to something that can be burned onto DVD.

I can convert the files easily, the problem I have, is that it convert to a default setting, which usually leaves me subtitles and sometimes the wrong spoken language I want.

Is there any program or way that I can choose to have no subtitles, and English as the spoken language, and have it convert with those options? I dont mind if its free, costs money, easy, or technical, just as long as it works and I dont lose quality.

To any of the basic ones. MPEG, MOV, AVI. Getting them to a format isnt the hard part, its just being able to choose what audio stream that format has, and rather or not it has the subtitles on or off too. All my MKV files are of video with dual audio, usually english - japanese, then english subtitles.

Regular converting programs will change the mkv file to whatever I choose, but always with the default settings of the mkv files, which leaves me with japanese audio and subtitles on, or english audio with subtitles on.

What software can you use to convert MKVs to AVIs or any other normal format? I want to try to burn a file that I have in MKV to a DVD using Windows DVD Maker. I have tried to use virtualdubmod, but it was incredibly confusing. Any advice?

After spending some time looking into this, I found the guide, attached below. Hopefully this will help anyone w/a similar problem. I haven't had a chance to try it yet, but it seems like it should work.
