Document Security on Portable USB Harddrives

I'm stumped. I would like to be able to have all of my personal documents secure on a portable hard drive but is it secure?

Basically, instead of creating documents on my internal hard drive which some hacker can access, I was thinking of creating all of my personal documents directly on my portable usb hard drive, so that I can remove the hard drive when I'm not accessing or creating that information. I would shut down my internet while creating or accessing these documents. Would a copy or temporary file be created on my internal hard drive? Or would all of the information be kept solely on my portable usb hard drive?

Im no computer expert, but if you are creating everything on your portable HD and then you are disconneting it, from your computer, Then you tell me how they can get to it. Through the Air !!!!! No copy will be in your internal HD !!!

Really?!?!?! So computers only create temporary files on the drive that your document was created from and not from the program file on your C: Drive?
