    overclocking GPU

I have a mild overclock on my EVGA GTX 570 (800MHz Core, 1600MHz Shader without any voltage increases) and I used MSI Afterburner for it. Fantastic program.

    Now what?

You can wait for Heist to come out and drop $20 on that.

    Building $2k Gaming Computer

With 2 GTX 580's absolutely not. They use 700+ watts at peak power just for the GPU's alone. http://www.guru3d.com/article/geforce-gtx-580-sli-review/14

    Building $2k Gaming Computer

You could invest in some RAM with lower timings for only a few bucks more (relatively speaking). Something along the lines of this: http://www.newegg.com/Product/Product.aspx?Item=N82E16820231445 You could also get away with a 1000w PSU instead of a 1200w one.

    Dark Souls

I never played Demon's Souls because I don't own a PS3, but seeing all these positive reviews of Dark Souls and the promise that, while it is difficult, it is a very rewarding game is making me really want to buy it for xbox.

    PAYDAY: The Heist

I'm willing to wait a few more weeks for this game, although it may not be a good move because that would place it at the same release period as BF3 so my time may be committed to that.

Buying a gaming computer - need help

I would go with 8GB to allot for future increases in RAM usage. Games like BF3 will take 1.25-1.5GB of RAM just for that one program alone, and when you add in Windows and any other background programs running that 4GB can fill quickly.

Built a new PC...first time in 5 years

Pretty sweet, I have the same CPU and also have an EVGA GTX 570. It was the first desktop I had built in probably 4 years, and forgot how much better they were :D I'm not much of an overclocker at all so I never do high OC's, but the 2600k went to a reasonable 4.2GHz with no change to voltages...

This is part of the reason why I don't really like playing betas of games like this.

They definitely aren't showing us everything, because as you pointed out it barely breaks a sweat to run it on ultra and have fantastic fps. I was just initially disappointed because the trees look like they were from 2006 and there are some really bad textures mixed in with really good ones...

Buying a gaming computer - need help

Yeah I would definitely go with a smaller SSD and a larger spinning drive. Put the OS and a few other things on the SSD and movies, music, documents, etc. on the storage drive.
