I know it doesn't support dual screens but if I plug a cable into one of the DVI ports and another into the S-video port in the middle will it send through both cables or do I need to change a setting?
What do you mean? The 7600's support dual screens... I do so all the time with mine. Clone or independent/stretched desktop.
Everything should be under the advanced display control panel. Just be sure you have Nvidia drivers loaded and not the standard microsoft ones.

Your card has two DVI ports in the back correct? Then it supports dual-monitors. If you haven't installed the Nvidia drivers then you won't have access to the Nvidia control panel, which has the option to enable it. If you have the the latest Nvidia drivers then all you need to do is find the little nvidia settings icon in the system tray at the bottom of the desktop, right click, Nvidia control panel, set up multiple displays. Cake.
