Well I've only seen about 400 and a half million billion threads about the 8800GT, and both 8800GTS's, so from now on, read this post first before asking what's better.
-BACKGROUND-
There are a few different versions of each one of the cards in the title, and I'm going to [try] to explain a little about them so you don't get confused. Most differences include changes in the amounts of VRAM, and the architecture. There are two types of architecture in play here, G80 (in the older 8800GTS) and the newer G92 (in the newer 8800GTS, and 8800GT).
-G80 8800GTS-
This is an older card, and as you can see, it uses the older G80 architecture. It comes in a 320MB or a 640MB version. This card is not recommended, as there are much better buys out there on the market. It is also the worst card (in terms of performance) out of the three I will be talking about.

-G92 8800GTS-
This is the newer version of the 8800GTS. To my knowledge, it only comes in a 512MB version. This card is better than the older G80 8800GTS and the 8800GT, but in most peoples eyes, still not worth it because of the price. Another thing to keep in mind is that this is a dual slot card (like the G80 8800GTS), so it may not fit depending on your case, motherboard, etc.
Here's a few examples of this card.
-G92 8800GT-
This is (at the time of writing) the best card available (price/performance) in most peoples eyes. It uses the G92 architecture, and is available in 256MB and 512MB versions. Most people seem to prefer the 256MB version, as it is much cheaper. The extra VRAM on the 512MB version comes in handy when playing games at high resolutions, so it really just depends on what you will doing with the card/your budget. This card is a single slot card, so it will fit in most cases.
Heres a few examples of this card.
-OVERALL-
In my opinion, the best card right now would be the 8800GT (either version, depending on your budget, and preferred resolution) and I think you'll find that most people agree with me. My other recommendation would be to look at AMD (ATI)'s new cards (such as the HD3850, HD3870, etc) or wait until February for nVidia to release the 9800 Series cards.
