I have noticed that a lot of processors have "integrated graphics" built in. If I got a processor with integrated graphics would I need a graphics card or do I just need to put a VGA/DVI/whatever connection onto the mobo?

The motherboard would have to have either a DVI or VGA connection in order to support the onboard graphics on the cpu die. No, you wouldn't need a dedicated video card if you all do is websurf and email basically. On board graphics won't play many games.

Just make sure you get the correct adapter, as some only have VGA, some have DVI, and some have HDMI.

Depends a lot on the platform you are going to use.. AMD's, APU's offer the best IGPU's on the market right now with Kaveri leading the way. FM1/FM2/FM2+/AM1 motherboards have a mix of DVI,VGA, HDMI and Display port video out connections.
You can also add certain dedicated cards with certain APU's for dual graphic's/crossfire for more video power... They can also play most new games on medium without issue...
