Can I extract files off my old hard drive?

I am going to upgrade my comp to a 80gb WD800JB hard drive from a 20gb. I also purchased a 6gb external hard drive to back everything up. But the more I read I wonder if I can just remove the old hard drive, install the new one and format it. Then re-install the old hard drive as a slave and then extract the files I want off it. Does this sound right? Or would it be quicker and easier to just go ahead and back the files up on the external hard drive since I already bought it?
 
easier to just do tha slave, and its faster too... but you'll need to reinstall games and most programs though

That would be easiest. But why bother taking them off at all, just leave them there and run that drive as a second drive

I would if it wasn't so noisy, but then it would only make noise when I accessed it right? Since it would be the slave.
