Can I record Minecraft server gameplay?

Hi guys. Some of you may know that I'm a big Minecraft player, but in any case, now you do. I've been playing for quite some time and I really want to start up a little series of it with 2 friends, but my computer is acting like it can't handle it and I'm pretty sure it should be able to. I can typically play Minecraft with all of the video settings maxed out with V-Sync on and running a server and a Google Hangout and Minecraft won't drop below 55fps and won't go above 61fps. Then I tried playing by myself, only running Minecraft, the server and the recording software and when I press record, the fps drops to around 30 and gets really sporadic.

I would really love to know if I should be able to record, and if I should, what should I do to make it work.

I'm using a HP ENVY DV6 with
i7-3630QM
NVIDIA GeForce GT 650M 2GB
8GB RAM
750GB 7200rpm HDD
1080p display

Some screen recording programs have a setting to lock the ingame fps to a certain amount.
What program are you using?
 
I have used multiple programs with the same result. I've tried BandiCam, DVDVideoSoft's Screen Recorder, DXTory, HyperCam 2 and CamStudio.
 
Fraps has an option in it that will allow you higher FPS recording. Some of those that you listed may also have that option you'll just have to google it and see.
 
Depends how much you're willing to put into the recorder. If you are fine with a watermark over all of your videos and want free do fraps (free) or Action by Mrillis (free) which is what I use. if you want to make it look more professional with out a watermark, and wouldn't mind putting in like $30 I would recommend Action by Mrillis. That is personally what I use when capturing. There is more details on it's site but it is made for specifically PC's like yours.
