I use a remote desktop at my job. I am sure my superiors at the corporate office can see what I'm doing on the remote desktop, but are they able to see what I'm doing on my "home" computer? (I use 2 monitors--one for my remote desktop, and one for internet on my home computer)

No. Remote desktop is just to control a computer remotely. You can't see the other way through.
