Complete noob, Looking for help!

Windows 7 Ultimate has more features than Windows 7 Home Premium but it is $80 more. Take your pick from either of these two. Also, the Corsair Power Supply and the video card you picked look good in my opinion.

I'd wait until next month and see how the next batch of AMD graphics cards look. I don't know exactly when they are released but it's supposed to be during November, which starts in 2 days.

Even if you do not plan on overclocking, Intel does not make very good heatsinks from what I have heard. I would buy the aftermarket heatsink that BillOhio suggested.
