I don't know for sure, but I think it's the amount of L2 cache they have, and how big the die is. They proably have different ones for the sockets too(939 and 754)
 
The differences include:
- Clock speed
- Voltage
- Operating temps
- Cache
- Process size
- Special instruction sets and funky features
