I have an E6300, currently at stock speeds and on stock cooling.
I used the thermal paste that was already on the cpu hsf.

Can I over clock to around 2.0GHz.


And still be fine?


I have an 80mm intake right next to the cpu.

with stock cooling as long as you don't up the voltage you should be fine, i would stay under 60-70*c load for the C2D. Kornowski has his at 2.2ghz @ stock volts, i think you can go higher. Then run orthos or OCCT to check stabiltiy and your limits with stock voltage, i wouldn't raise the voltage untill you get a new cooler.
 
If you don't raise the voltages then heat does not rise much, and as you said, stock, cooling should not be a problem. I've never OC'ed a C2d so I can't say for certain, though my immediate guess is an affirmative. It doesn't hurt to try because even on the off chance your chip is incapable of such a feat, It'll simply refuse to post or act unstable.

I understand the trial and error part, to where to just go back and change it.

And, I'll notice a difference in gaming, along with more Ram?

As long as you don't go suicidal a crank up the voltage, or similar, it should all go smoothly, no threat to anything. On whether you'll notice a difference, thatguy16's right, you'll probably need a larger increase to actually make a difference. Try going as high as you can stock voltages, My old sandy (a64 3700) went from 2.2-2.8ghz stock voltage. Different proc, i know but the potential is still there. If you're lucky you'll get to a point where you'll have to reduce Mem speed to keep going, consider yourself lucky if that happens.

It also depends on the game. An RTS usually shows larger FPS boons when it comes to overclocking, due to the larger than normal reliance on CPU. Test it out in a couple games, note the increase, then decide if you even need that OC.
 
I have my E6300 OC on stock voltage to 2.4ghz right now, I ran orthos for 3 hours and had no errors. I did have to reduce my memory settings however, I am going to push for 2.8ghz this week, I had it at 3ghz but had issues and backed it down to 2.45 and didnt mess with it any more!!

2.45 is good, when you oc it also overclocks the memory. Depending on the motherboard you can set the ram ratio to 1:1 or lower the speed from 800 to 667 or 667 to 533. Therefor if your ram is 800 and you lower it to 667 in bios after overclocking it will be 800mhz. But if it does overclock you would need to change the voltage (ie from 1.9v to 2-2.1v)
 
Every motherboard will oc the ram when upping the fsb. Thats why you need to set it to 667 and or 1:1. Unless you want your ram oc'ed (ie 900mhz) then you may need to up the voltage a little
