I read that my i7 is just gonna default my ram down to 1066mhz no matter what and that the 1600 is for people who plan on overclocking which I don't plan on doing.
I don't know anything about the I7 doing that...but sounds like you made up your mind already, right?
Yes, your RAM will most likely default to the CPU's max supported speed, which is 1066.
You'll have to go into the BIOS and change the timings, and voltage if necessary.
