once i upgrade my ocmputer enough to have all the extra parts i need for another system, except hard drives and a RAID controller, how do i set up a server to store data from all of our other computers on?

It will contain:

Acer RS740DVF motherboard

AMD Athlon LE-1600

1 gb ddr2 667

intergrated Radeon 2100

PSU unknown as of now

Stock Acer Case

Athlon X2 7750 heatsink for the LE-1600
 
Just slap an OS on it and share the drives, then map the drives to your other computers and they can read/write files to it.
 
Or, if you want, give Windows Home Server a run. The setup guides take out some of the nitty-gritty in getting a simple network server going.
