I was wondering do most games run on 16:9 resolutions or will they default to 16:10??
In this case, yes. The 16:9 and wider aspect ratios are used often in film. With a 16:10 ratio you would notice more empty space above and below the video frame.
As long as the display has enough pixels to show the video at full res. then the clarity will be as good as the video intends. i.e. watching a 1920x1080 video on a 1920x1080 (16:9) screen will look just as good as viewing it on a 1920x1200 (16:10) screen. Watching that video on a 1280x720 screen will obviously have a reduction in detail since the display isn't able to display all of the pixels.

IF video res > display res THEN less detail
IF video res </= display res THEN full quality.
