Does Adobe substitute PDF fonts?

Does anyone know if incompatible versions of adobe reader will end up substituting fonts?

I've been emailing out some resumes. I decided to send them all in PDF format because my Word resumes were not being displayed properly on the recieving end due to incompatible versions of Word. I'm assuming that sending them as a PDF eliminates that concern. But am I wrong? Can the same problem occur with PDF's if the recipients adobe software is incompatible?

PDF is treated like an image file. The fonts are there and can only be changed with a PDF editor.
