Extending CAT5 length

We decided to upgrade all our network switches to gigabit. In the process of doing this I found out that 10/100 must be able to make longer CAT5 runs because there was one run to an out building that measured almost 400 feet and the gigabit switch would not work. So I put in another small 5 port switch in the middle and it worked fine. I have the same issue on another run. It goes from the main switch to an out building around 400 feet and from there we have another switch that goes another 348 feet to an even further building. So in order to make it work I was going to have to put a switch in the middle of both of those runs to boost the signal. This last building would end up have 4 switches in the line to make it reach. I am not a networking expert, but other than running a fiber cable is this about the best way to accomplish this?

Pretty much. The limits on those is 100 meters. Usually you'd use some fiber for longer runs such as multimode OM2+ for ~550m.
 
When you say CAT 5, do you really mean CAT 5 or is it 5e/6?

As beers said, fiber is the best method for long distance runs.
