I have this same issue with every version of Windows. Over time, the folder tree on the left side of explorer keeps expanding. I end up with multiple versions of folders such as documents. I'd like to understand how to streamline it without losing things.

To get rid of the quick access section do this.

This option may work in 11 as well as it was designed for 10.

Or you can see this and do it manually.

To get rid of one drive, all you need to do is uninstall it via the programs section.

Then you need to explain what you are wanting, with pictures. This is what gives you multiples of each folder.
