Graphics card Stream processor Question. Need advice

Hi, I have no idea what stream processor do on a graphics card. I want to know whats the difference between the Nvidia brand 8800GTS series with 96 stream processor and the ATI 320 Stream processor. Are they both the same in speed. Which one is better? Please let me know. thanks
 
I would still stick with Nvidia's 8 series over ATi's X2K line up for those reasons, being cooler and uses less power and has on par or superior performance.
