I core 7-6700k +
Gigabyte GTX970 G1 GAMING SOC 4GB GDDR5 2xDVI HDMI 3xDP PCI-E
will it bottleneck the cpu

A core I7 is an overkill for gaming, you can get awesome performance with an I5. That being said, I assumed it was for gaming, do you do anything else with your computer?

If you have the money, a Core i7 6700K is great, but you don't NEED it for high end gaming. If you can only afford a 6700k and GTX 970, I would get an i5 and upgrade to a GTX 1070.

Get a 1070/1080.

+1 for the i5-6600K + GTX 1070. You'll have a much better experience with the added GPU performance, and you won't be held back with the i5-6600K. Just make sure to buy a cooler because the K processors don't come with one.

Yes you can overclock with a Z170 board.
