Help With Word inserting todays date on previously written letters

Could someone please tell me how to stop the computer from automaticaly inserting todays date on a previously written document.
I Have done the obvious such as , insert>date& Time also removed Date & Time from View>header & Footer. I insert date usually by using shift>alt>d.

Is this the reason the computer does it or is there another way of ridding the computer of this bad habit. If someone could give me some help I would be extremely grateful

when you shift-alt-d it creates a field for automatically creating "todays" date. This is helpful when you create documents that are use on a constant, almost daily basis, but if you trying to create a post-dated document you have to go about it the dinosaur way and type the date in OR click insert>date and time and make sure the "update automatically" box is left unchecked.
