I don't know much about computers but i'm buying a workstation soon and need some advice on some technical issues which i don't really understand.

I'm looking at a HP Z800 and a Dell T5500 which is capable of Dual Processor.
For now i started off with a single - 6 Core Xeon processor, might upgrade to a second processor later on.
So i just need to focus on the single processor's memory, in which i'm looking at a 12GB memory, i was advised that to enable the computer to perform at its best it would require me to use up all 3 channels on the CPU which makes 4GB x 3.
It is stated that HP Z800 have 12 DIMMS , Dell T5500 9 DIMMS
I'm rather confuse by 9 DIMSS / 12 DIMMS, what are they ? HP stated 12 DIMM slots so what happens if i use a single 6 core Processor with a 12 DIMM slots how many channel do i have to fill up ? Is it the same thing ?
