How to get Fast file transfer

In new computer in what should I focus on to get the fastest file transfer between two external hard drives ???

Probably the fastest would be to connect both drives to the computer via eSata. Both have to be connected that way. If one or the other is connected via USB it will bottleneck the transfer.
