I am utterly confused as to why the rivalry is called "Mac vs PC" or "PC vs Mac". After all, isn't a Mac a Personal Computer (PC). Considering they are both PCs, why isn't the rivalry called Windows vs Mac?
That is a good point. However, I am still lost. Since a Mac is a PC. Is it safe to refer to a Windows/Linux computer as a PC in a way that it excludes Mac?

I thought it was intuitively obvious. Apple products and systems are heavily regulated by apple. For example (zomg fact coming up here), a developer can't publish anything on apple's "app store" without specific consent and approval from apple, meaning that if you compete with apple on any level, a la adobe, you lose your "privilege" to publish your software on their devices- a la flash.

Germany was still fascist even though it was part of a largely antifascist world. Likewise apple can create a fascist sub-market in a antifascist sub market and still be fascist.
